CANNONAU OF SARDINIA Denomination of controlled origin
SU SOI is a pure Cannonau, with a deep ruby red color. In the rich and complex perfume, 3 different notes emerge, from black fruit to cherry, to spices with nutmeg and cocoa, to floral with violet. Afterwards the hint of undergrowth returns with black fruits mixed with cocoa. Harmonious taste with elegant body and great concentration, it maintains the sensations expressed on the nose with soft tannins. We recommend a combination with roasted meat, veal liver, roast duck, aged cheeses and above all the typical dishes of Sardinian cuisine.
Color: Red with purple notes.
Perfume: it is characterized by notes of macerated flowers, black cherry jam, balsamic suggestions, leather, pepper, good mineral and fruity notes with red berry, vanilla, spicy notes of remarkable persistence.
Taste: It comes soft on the palate, even if it then releases a decisive but sweet tannin, the freshness supports it and gives it texture. Velvety and soft in its elegant texture. It goes well with meat-based structured dishes but seasoned and blue cheeses are also excellent.

When you disembark in Gallura, consciously or not, a huge amount of sensory stimuli are activated and forces us to better observe the environment around us. The sense immediately involved is the sight and the consequent perception is that of a "MURALES", a color world that engulfs and attracts us;
“The earth uses the vine as an instrument of union with man, it gives information to the grape that it raises with care, which writes the codes in its notebook, the wine. The senses responsible for its decoding create a visceral relationship with the elements, giving us almost spiritual emotions with the aim of helping us to insert ourselves into a perfect system. The earth tries to teach us to love it so as not to harm it. "
The passion for vines and wine are in the soul of those who, thanks to careful management, control what nature offers. Modern technologies allow us, in the various steps, from the grape to the must ... to the wine ... to the bottle, to conquer its value, elegance and balance.
